Mojito with Lime Blossom Tea

PREPARATION : 10 minutes | YIELD : 6 portions
500 ml (2 cups) water
60 g (1/4 cup) sugar
2 sachets (6g) Linden herbal tea from FloralTea
500 ml (2 cups) sparkling water with lime flavor, cold
180 ml (3/4 cup) de téquila ( optional )
Lime wedges, to taste
Fresh mint leaves, to taste
Green Cream of mint or mint syrup ( with or without alcohol ) for the color, to taste
Ice cubes, to taste
In a small pot, boil the water with the sugar, until complete dissolution.
Remove pot from heat, add the tea sachets, and let infuse covered for 10 minutes.
Remove the sachets and cool off in the fridge. Keep the sachets for 2-3 other infusions.
In a pitcher, mix the sweet infusion, the sparkling water and the tequila.
Add ice, mint and lime wedges to taste. Poor the mojito into glasses.
Add a few drops of the green cream of mint or mint syrup in each glass, for the color if wanted. Served immediately!
TIP - the addition of lime will brown the linden infusion. Lime being an essential ingredient of a successful mojito, simply add a few drops of green cream of mint or mint syrup to compensate, until you obtain a mojito of perfect taste and color.
